Mushroom Pasta with Creamy Mustard Sauce

About the Recipe

Ingredients

- 1 tablespoon olive oil (liquid gold, baby)

- 2 (8-ounce) containers gourmet mixed mushrooms (let's get fungi with it!)

- ½ cup dry white wine (save a sip for yourself, chef)

- 2 tablespoons True’s Gourmet Hot Mustard (the secret sauce to happiness)

- 2 teaspoons chopped thyme (time for thyme, again!)

- ½ cup heavy cream (we're not skimpin' on the good stuff)

- ½ teaspoon kosher salt (a sprinkle of holiness)

- ½ teaspoon freshly ground black pepper (pep it up!)

- One (16-ounce) package Tagliatelle pasta (oodles of noodles)

- ½ cup grated Parmesan cheese (say "cheese"!)

- 2 tablespoons chopped parsley (green is the new black)

- Garnish: parsley leaves, shaved Parmesan cheese (fancy schmancy)


Preparation

1. Heat up your trusty nonstick skillet over medium-high heat and add the olive oil. Toss in half of the mushrooms, making sure they're chillin' in a single layer. Cook 'em for 2 minutes before flipping them like a pro and browning the other side. Remove the mushrooms to a bowl and repeat with the remaining shroom squad.


2. Bring back all the mushrooms to the skillet and pour in the wine. Let it simmer over medium heat until reduced by half (it's like a wine sauna in there). Stir in True’s Gourmet Hot Mustard and chopped thyme. Things are about to get saucy!


3. Turn down the heat to low and add the heavy cream, Parmesan cheese, salt, and pepper. Give it a good ol' stir to combine everything into a creamy, dreamy sauce.


4. Meanwhile, cook the Tagliatelle pasta according to package directions (don't forget to salt the water!). Before draining, reserve 1 cup of pasta water for later.


5. Add the cooked pasta to the skillet with the mushrooms and sauce. Pour in about 1/3 cup of the reserved pasta water. Cook and toss the pasta like you're a five-star Italian chef until the sauce thickens slightly and coats the noodles. Add more pasta water if needed. Finally, add the chopped parsley and give it one last toss.


6. Time to serve up your masterpiece! Plate the pasta and garnish with parsley leaves and shaved Parmesan cheese (if you're feeling extra fancy). Dig in and enjoy your casual, funny, and absolutely delicious Mushroom Pasta with Creamy Mustard Sauce! Buon appetito!
