Ingredients
12 large eggs
1 tablespoon True’s Gourmet Hot Mustard
1/3 cup mayonnaise
1 tablespoon minced shallotÂ
½ teaspoon kosher salt
¼ teaspoon ground black pepper
Toppings: cooked bacon, pickled okra, creole seasoning, jalapeno slices, caviar, chopped chives, crème fraiche, paprika
Preparation
Fill a saucepan with one inch of water and insert a steamer basket. Bring the water to a boil and place the eggs in the steamer basket.

Cover the pan and let the eggs steam from the boiling water for 15 minutes. Shock with cold water and peel.

Using a sharp knife, slice each egg in half lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.

Using a fork, mash up the yolks and add True’s mustard, mayonnaise, shallot, salt and pepper. (Add more mayonnaise as necessary to get to the desired creamy consistency)

Pipe or spoon the mixture into egg white halves and top with desired toppings.
