Ingredients
- One (4 ½ pound) eye of round beef roast
- 1 tablespoon minced garlic
- 3 tablespoons olive oil
- ¼ cup True’s Gourmet Hot Mustard
- 2 teaspoons soy sauce
- 1 teaspoon Worcestershire sauce
- Garnish: rosemary sprigs
Preparation
1. Place the eye of round roast on an 18 x 11-inch piece of heavy-duty aluminum foil in a shallow roasting pan.
2. In a bowl, combine the minced garlic, olive oil, True’s Gourmet Hot Mustard, soy sauce, and Worcestershire sauce.
3. Spread the sauce mixture evenly over the roast. Fold the foil over the roast to seal in the flavors.
4. Bake the roast in a preheated 450°F (232°C) oven, covered, for 20 minutes. Then, uncover and bake for an additional 25 minutes, or until the roast reaches your desired level of doneness.
5. Remove the roast from the oven and cover it. Allow it to rest for 15 minutes before slicing.
