Chicken Tetrazzini with Piedmont Pennies Crumbs
A weeknight casserole the test kitchen kept reaching for: True's mustard sharpens the cream sauce so the cheese can carry it.

Preparation
- Preheat the broiler.
- In a medium saucepan, melt butter over medium heat and then sprinkle with flour. Whisk for 1 minute or until smooth.
- Stir in the salt, pepper, thyme, and True's mustard. Slowly whisk in milk and cook until it thickens. Remove from heat and stir in 1 cup grated Parmesan cheese.
- In a large bowl, combine cooked chicken, cooked pasta, and the sauce.
- Pour into a 9x13-inch baking dish and sprinkle with remaining ½ cup Parmesan cheese, cheddar cheese, and the Piedmont Pennies cheesy breadcrumbs.
- Place under a broiler for 1–2 minutes or until the cheese melts.
