Spiral Cucumber with Hot Mustard Dressing
The TikTok cucumber, made True's. Spiral-cut so the dressing finds every fold. The mustard does the work of chili crisp without the heat — sweet, sharp, sesame on top.

Preparation
- Spiral-cut. Lay a cucumber flat. Insert a chopstick along each long side as a stop-guard. Holding a sharp knife at a 45° angle, slice along the cucumber from end to end — the chopsticks stop the blade before it cuts through. Rotate the cucumber 180° and slice again at the same angle, this time straight across, to create the accordion spiral. Gently pull apart so the cucumber stretches into a continuous coiled ribbon.
- Salt and rest. Lay the spirals on a tray, sprinkle with kosher salt. Rest 10 minutes. Pat dry with a clean towel — they'll keep their shape better drier.
- Whisk the dressing. Mustard, rice vinegar, soy, honey, sesame oil, garlic, ginger. Taste — sweet, sharp, mustard-forward, with the soy giving it depth.
- Plate. Coil each cucumber on a flat plate or shallow bowl. Spoon dressing into the folds — let it pool around the bottom too. Shower with sesame seeds and scallions.
