Hot Honey-Mustard Chicken Tenders with Eastaboga Bee Company
The TikTok chicken tender, made True's. Buttermilk-brined with mustard, fried golden, tossed in a hot honey-mustard glaze that lacquers on contact. Eastaboga's honey is the gloss. True's is the bite under it. Eat with your hands.

Preparation
- Brine. Whisk buttermilk, True's, salt, pepper in a large bowl. Add chicken, toss to coat. Cover, refrigerate at least 1 hour or up to 8.
- Dredge prep. Whisk all dredge ingredients in a shallow bowl until uniformly seasoned.
- Heat oil. Pour about 1 inch of oil into a large heavy skillet or Dutch oven. Heat over medium-high to 350°F.
- Dredge. Working one tender at a time, lift from buttermilk, let excess drip. Lay in flour mixture and press firmly to coat. Flip, press again. Move to a plate.
- Fry. Lower 4 to 5 tenders into hot oil — don't crowd. Fry 4 to 5 minutes per side, until deeply golden and 165°F internal. Move to a wire rack to drain. Repeat with remaining tenders.
- Make the glaze. While tenders fry, melt butter in a small saucepan over medium. Whisk in honey, True's, vinegar, salt, cayenne. Simmer 2 minutes until glossy.
- Toss. Move hot tenders to a large bowl. Pour glaze over. Toss to coat. Serve immediately.
