Classic French Tomato Mustard Tart

Preparation
- Slice tomatoes; salt on both sides and lay flat on a cooling rack for 1 hour.
- Preheat oven to 425°F.
- Butter and flour a 10-inch tart pan or pie plate. Unroll puff pastry and fit into pan; trim edges. Poke dough with a fork.
- Spread True's Mustard over the bottom. Sprinkle 1 ½ cups grated cheese on top. Sprinkle with bread crumbs.
- Arrange tomato slices in an overlapping even layer. Sprinkle with herbs de Provence. Repeat. Finish with salt, pepper, more herbs, and remaining ½ cup cheese.
- Bake 35–40 minutes until crust is golden. Garnish with thyme.
