Classic French Tomato Mustard Tart

Preparation

  1. Slice tomatoes; salt on both sides and lay flat on a cooling rack for 1 hour.
  2. Preheat oven to 425°F.
  3. Butter and flour a 10-inch tart pan or pie plate. Unroll puff pastry and fit into pan; trim edges. Poke dough with a fork.
  4. Spread True's Mustard over the bottom. Sprinkle 1 ½ cups grated cheese on top. Sprinkle with bread crumbs.
  5. Arrange tomato slices in an overlapping even layer. Sprinkle with herbs de Provence. Repeat. Finish with salt, pepper, more herbs, and remaining ½ cup cheese.
  6. Bake 35–40 minutes until crust is golden. Garnish with thyme.
