Mushroom Pasta with Creamy Mustard Sauce

Preparation
- Heat nonstick skillet over medium-high; add olive oil. Add half the mushrooms in a single layer; cook 2 minutes; flip and brown. Remove to a bowl. Repeat with remaining mushrooms.
- Return mushrooms to skillet; add wine. Simmer until reduced by half. Stir in True's mustard and thyme.
- Reduce heat to low; add cream, Parmesan, salt and pepper. Stir to combine.
- Cook Tagliatelle per package; reserve 1 cup pasta water before draining.
- Add pasta to skillet with mushrooms and sauce; pour in 1/3 cup pasta water. Toss until sauce thickens and coats pasta. Add more pasta water as needed. Stir in parsley.
- Garnish with parsley leaves and shaved Parmesan.
