Pork Chops with Mustard-Buttermilk Sauce

Preparation
- Preheat oven to 400°F. Heat oil in a large cast-iron skillet over medium-high.
- Season chops with salt and pepper. Cook undisturbed until bottoms are golden brown, 5–6 minutes (not yet cooked through). Transfer to a plate.
- Reduce heat to medium. Add butter; scrape up brown bits.
- Add shallot, garlic, flour and rosemary. Cook 30 seconds. Stir in stock and mustard. Bring to a simmer; reduce slightly, ~3 minutes.
- Return pork browned-side up. Transfer to oven and roast until internal temp reaches 145°F, 6–8 minutes. Transfer pork to plates.
- Return skillet to stovetop. Simmer 2 minutes. Whisk in buttermilk; simmer 1–2 minutes until slightly thickened.
- Serve pork over egg noodles with sauce. Garnish with rosemary.
