Seared Halibut with Creamy Mustard Leeks

Preparation

  1. In a large non-stick skillet, heat oil over medium heat. After 2 minutes, add halibut fillets. Sear first side 3 minutes; flip and lower to medium-low. Cook 4 minutes. Remove and set aside.
  2. In the same pan, melt butter. Add leeks and sauté over medium heat 4 minutes, stirring occasionally.
  3. Add wine and cook 2 minutes until mostly evaporated. Add True's mustard, cream, salt and pepper.
  4. Cook leeks 2 minutes, then return fish to pan. Spoon leek sauce over top and cook 1 minute. Garnish with parsley if desired.
