Sheet Pan Garlic Salmon with Potatoes

Preparation

  1. Preheat oven to 425°F.
  2. Combine baby potatoes, red onion wedges, green onions, and 2 tablespoons olive oil. Spread on a large rimmed baking sheet. Sprinkle with 1 tsp salt and ¼ tsp pepper.
  3. Roast 20 minutes, until vegetables start to brown. Reduce oven to 325°F.
  4. Add 1 tablespoon True's mustard to the vegetables; toss to coat. Push vegetables to edges of pan.
  5. Place salmon lengthwise in middle of pan. Spread remaining 3 tablespoons mustard on salmon; sprinkle with remaining salt and pepper.
  6. In a skillet, heat 1/3 cup olive oil over medium-high. Add garlic; cook until golden, ~2 minutes. Pour hot oil and garlic over the salmon.
  7. Roast 13–15 minutes, until salmon flakes easily and vegetables are tender.
  8. Transfer to platter, sprinkle with chives, serve with lemon wedges.
