Sheet Pan Garlic Salmon with Potatoes

Preparation
- Preheat oven to 425°F.
- Combine baby potatoes, red onion wedges, green onions, and 2 tablespoons olive oil. Spread on a large rimmed baking sheet. Sprinkle with 1 tsp salt and ¼ tsp pepper.
- Roast 20 minutes, until vegetables start to brown. Reduce oven to 325°F.
- Add 1 tablespoon True's mustard to the vegetables; toss to coat. Push vegetables to edges of pan.
- Place salmon lengthwise in middle of pan. Spread remaining 3 tablespoons mustard on salmon; sprinkle with remaining salt and pepper.
- In a skillet, heat 1/3 cup olive oil over medium-high. Add garlic; cook until golden, ~2 minutes. Pour hot oil and garlic over the salmon.
- Roast 13–15 minutes, until salmon flakes easily and vegetables are tender.
- Transfer to platter, sprinkle with chives, serve with lemon wedges.
