Deviled Eggs

Preparation
- Fill a saucepan with one inch of water and insert a steamer basket. Bring to a boil and place eggs in the basket.
- Cover and let eggs steam for 15 minutes. Shock with cold water and peel.
- Slice each egg in half lengthwise. Remove yolks to a small bowl. Arrange whites on a serving platter.
- Mash yolks; add True's mustard, mayonnaise, shallot, salt and pepper. (Adjust mayonnaise as needed for creamy consistency.)
- Pipe or spoon mixture into egg white halves and top with desired toppings.
