Deviled Eggs

Ingredients

Preparation

  1. Fill a saucepan with one inch of water and insert a steamer basket. Bring to a boil and place eggs in the basket.
  2. Cover and let eggs steam for 15 minutes. Shock with cold water and peel.
  3. Slice each egg in half lengthwise. Remove yolks to a small bowl. Arrange whites on a serving platter.
  4. Mash yolks; add True's mustard, mayonnaise, shallot, salt and pepper. (Adjust mayonnaise as needed for creamy consistency.)
  5. Pipe or spoon mixture into egg white halves and top with desired toppings.
