Eye of Round, Mustard-Crusted

Preparation

  1. Place roast on an 18 x 11-inch piece of heavy-duty foil in a shallow roasting pan.
  2. Combine garlic, olive oil, True's, soy sauce, and Worcestershire.
  3. Spread sauce over the roast. Fold foil to seal.
  4. Bake covered at 450°F for 20 minutes. Uncover and bake another 25 minutes, or until desired doneness.
  5. Rest 15 minutes covered before slicing.
  6. Slice and garnish with rosemary.
